California: Assistant Winemaker

Under general direction, assist Winemaker with vineyard inspections, harvest scheduling, conversion of grapes to wine, wine blending, fining trials, quality, etc. relating to Rosenblum wine production at Alameda and possibly at other 3rd party sites. Create cellar work orders in WiPS to manage wine production, blending, fining, stabilization, and barrel aging per manager winemaker’s instructions. Work with Cellar Manager and cellar team, as needed, to ensure that the correct processing and sanitation procedures are being performed.

Decision Making
1. Determine additions to be made to production wines based on analytical results. Decisions to be made with minimal input from Winemakers. Appropriate additions need to be made to maintain integrity and quality of wines.
2. Responsible for ensuring appropriate winemaking decisions are made, particular special lots to ensure wine quality is achieved.
3.Oversee winemaking production in winemaker’s absence.
4.Participate in supply demand meetings.

Key Outputs/Deliverables
·Oversee certain red and white grape processing and fermentations.
·Write “Cellar Work Orders” to manage red and white wine production, blending, finishing, stabilization and storage per winemakers’ requests.
·Monitor daily laboratory analyses and take appropriate action as needed. Taste all laboratory samples to monitor quality. Evaluate laboratory analyses on a daily basis and write appropriate work orders to ensure that proper levels of all constituents (such as SO2, acid, alcohol, and sugar) are maintained in the wine. Inform Winemakers of problem wines so appropriate action can be taken.
·Oversee quality control during bottling.
·Review and correct wine movements and ensure data in WIPS is accurate and regularly updated (tanks and barrels).
·Manage red and white wine in storage, stabilization, blending, bottling prep through written work orders.
·With manager winemaker, detect and address potential, existing wine defects
·Work in conjuction with bottling, cellar and lab to meet production schedules and requirements.
·Manage product development and experimental winemaking projects.
·Assist winemaker regularly with vineyard maturity assessments.
·Coordinate shipping and receiving of bulk wines.
·Assist Winemaker in planning work schedules.
·Coordinate Rosenblum harvest paperwork and assist in monitoring fermenting wines during harvest by tasting and recording daily Brix and temperature values to evaluate quality and organize pressing and blending operations.
·May carry out all phases of research: writing proposals, gathering support documentation, data collection, evaluation and statistical analysis, writing summaries and recommendations based on research results. Preparation of research for presentation or publication in wine related events or publications.
·May develop and maintain a sensory program that ensures timely tasting of experimental wines by a well-trained panel. Evaluate tasting results, including statistical analysis.
·Assist in educational tours and tastings as needed.
·Other duties as required

·BA/BS in Enology or related field or UC Davis Winemaking Certificate
·Complete technical knowledge of all winemaking practices.
·Demonstrated analytical skills.
·Excellent verbal and written communication skills.
·Computer literate; MS Office. Intermediate level for Excel and Basic Word experience.
·Demonstrated ability to analyze projects/processes, development, implement recommendations, and make sound decisions in support of business needs with very limited supervision.
·Knowledge/experience in vineyard operations.
·Demonstrated ability to lead/develop harvest staff.
·Effectively communicate with large and small groups.
·Experience in vineyard operations.
